Purple and Orange Carrot Salad with a Walnut Oil Dressing


The mellow flavour of walnut oil and a handful of toasted walnuts turns this very simple salad into something special.
Purple Carrots are not quite as sweet as orange ones so it's good to combine them in this vibrant salad.


Ingredients:

2 medium orange carrots
2 medium purple carrots
A handful of toasted walnuts

Salad Dressing:

Whisk together :

6 tablespoons of Uncle Joe's Cold Pressed walnut oil
1 tablespoon of white balsamic vinegar
1 tablespoon of lemon juice
1/2 to 1 teaspoon of honey
1 teaspoon of Dijon mustard
Freshly ground black pepper and salt to taste.

Method:

Peel and slice the carrots and shave them into long ribbons.
Toss them  with the walnuts in the dressing

We enjoyed this salad on a bed of mesclun salad, and served with falafel patties .
